Mamachari Kombucha
Christy Jensen is the good soul and bad ass behind Mamachari Kombucha, the first locally-brewed and -distributed kombucha tea. Oh, and she’s doing it all herself. Christy grew up in Japan, landing a while later in our beautiful state to study artisan baking. Her knowledge of fermentation, combined with the introduction to kombucha tea by a ‘cute boy,’ gave roots to what has ultimately become a thriving business. Initially, she brewed at home for herself and friends, laboring and experimenting in an effort to nail the perfect ratios [no over-fermenting, no over-flavoring]. After growing tired of creepy science experiments growing in jars and jugs throughout the home, she got a little help from her good friends [and COLLECTIVE favorites] Derek and Moudi, the owner’s of Laziz. She brewed in their commercial kitchen until she outgrew that space, and concocts today in the Chocolate Conspiracy space [blog coming soon on that magic]. No surprise, they’ve outgrown that space, as well, and Mamachari is currently in the midst of a Kickstarter campaign that they hope will enable them to expand in a new location and continue to make the good stuff.
