SLC residents are actually remarkably well set-up, in terms of restaurant choices. There's a pretty widespread intermingling of homes and businesses throughout the city, which makes for a plethora of choices that are likely close to your location on any given day. On this particular day [for a COLLECTIVE team meeting], Trio fit the bill on location. As luck would have it, they also happen to have a super savory menu.

Trio is perched on corner of 900 East and 680 South, just north of 9th & 9th hub. Had it been slightly warmer outside, we'd have chosen a table on the patio; it's a phenomenal feature of the Trio lot, spacious, covered and ideally-placed for people watching. Weather uncooperative, we went inside for warmth provided by the famous-flat-bread making brick oven. Trio's menu is rustic and better-than-homemade, to be conservative. The meatball [yes...singular, large meatball] was an easy table pleaser, the salad was gaping [in the best possible way], and the paninis were grilled to perfect delight. Drool-inducing, really.
